Spinach and Mushroom Quiche for Autumn
Ingredients:
For the Pie Crust:
– 1 1/4 cups all-purpose flour
– 1/2 cup unsalted butter, cold and cubed
– 1/4 teaspoon salt
– 3-4 tablespoons ice water
For the Filling:
– 1 cup mushrooms, sliced
– 2 cups fresh spinach, chopped
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– 4 large eggs
– 1 cup milk or half-and-half
– 1 cup shredded Swiss or Gruyere cheese
– Salt and black pepper to taste
– 1/4 teaspoon nutmeg (optional)
– Fresh parsley for garnish (optional)
 
Instructions:
1. Prepare the Pie Crust:
– In a food processor, combine the flour and salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
– Gradually add ice water, one tablespoon at a time, and pulse until the dough just comes together.
– Turn the dough out onto a lightly floured surface, gather it into a ball, flatten it into a disk, and wrap it in plastic wrap. Refrigerate for at least 30 minutes.
2. Preheat the Oven:
– Preheat your oven to 190°C.
3. Roll Out the Pie Crust:
– Roll out the chilled pie crust on a floured surface and fit it into a 9-inch pie dish. Trim any excess crust and crimp the edges. Prick the bottom with a fork to prevent it from puffing up during baking.
4. Prepare the Filling:
– In a skillet, heat olive oil over medium heat. Add chopped onions and cook until softened. Add sliced mushrooms and cook until they release their moisture and become golden brown. Add minced garlic and cook for an additional minute. Stir in chopped spinach and cook until wilted. Remove from heat.
5. Whisk the Egg Mixture:
– In a bowl, whisk together eggs, milk or half-and-half, salt, black pepper, and nutmeg (if using).
6. Assemble the Quiche:
– Spread the mushroom and spinach mixture evenly over the prepared pie crust. Sprinkle shredded cheese on top.
– Pour the egg mixture over the vegetables and cheese.
7. Bake:
– Bake the quiche in the preheated oven for 35-40 minutes or until the centre is set and the top is golden brown.
8. Cool and Serve:
– Allow the quiche to cool for a few minutes before slicing. Garnish with fresh parsley if desired.
9. Enjoy:
– Serve this spinach and mushroom quiche warm or at room temperature. It makes a delightful autumn meal for everyone.
